Roasted Duck Recipe (Vịt Quay)

*** Tips to have an excellent Roasted Duck – One of spectacular Vietnamese Food Recipes for Tet Holiday:

The duck skin is very dry when you put it into the oven. Therefore, the duck need to be dried first, the minimum time span is overnight to 1 day or 2/3 days like Beijing recipes.
 
In order to have crunchy & shiny brown skin, malt is a compulsory ingredient. Eventhough, honey, molasses or jaggery can be used as substitutes; the final result will not be as good as using malt (melted sugar).

Ingredients:

A duck (1 – 1.2 kg)

Spices for the inside
 
1 tablespoon of mashed garlic (15-20gr)
1 tablespoon of mashed dried onions (15-20gr)
2 tablespoons of oyster sauce
1.5 teaspoon of salt
1 teaspoon of five-spice powder
1 steaspoon of grinded pepper
1 tablespoon of sugar

 
Spices for the outside

3 tablespoons of malt
1 tablespoon of boiled water
1.5 tablespoon of soy sauce
1 teaspoon of ginger powder (or 2 spoons of mashed ginger)
1 teaspoon of garlic powder (or 2 spoons of mashed garlic)
2 teaspoons of vinegar
1 teaspoon of salt

Processes:

Step 1: Get the duck cleaned. Smash some ginger and mix with white wine. Use this to rub through inside & outside the duck (wait for 20 – 25 mins to let all the smelling goes away). Clean it with cool water then dry it inside out. If the skin is torn, you can use white thread to sew, the more stretching the skin is, the better it gets when we roast it.

Step 2: Mix all the spices for the inside, you can adjust this mixture according to your tastes. Use your hands to rub these spices inside the duck. For the outside, you can mix 2/3 spoon of salt with 2/3 spoon of five-spice powder, rub it on the duck skin.

2 – 3 eggplants
200gr shrimp
300gr grinded pork
5gr dried cassava vermicelli (Miến Khô – Buy at Vietnamese Markets)

Process:

Step 1: Cut in half eggplants and bring to clean. Use spoon to scoop away all seeds. Next, soak them into cold water added a little salt in 30 minutes.

Step 2: Soak dired cassava vermicelli unti it is soft. Next, cut it short. Peel off the cover of shrimps, pull out the black line on their backs. Smash well. Mix smashed shrimp + grinded pork + sliced purple onion + cassava vermicelli + ½ teaspoon salt + ½ pepper + ½ maggi’s stuff. Marinate in 15 – 20 minutes.

Hau Giang Province (Tỉnh Hậu Giang)


Next post About Vietnam, I will introduce about Hau Giang Province (Tỉnh Hậu Giang). It belongs to Mekong Delta. It borders with Can Tho City, Vinh Long Province on the north, Bac Lieu Province on the south, Soc Trang Province on the east, and Kien Giang Province on the west. Hau Giang is located on complicated network of rivers, springs, and canals such as: Hau, Cai Tu rivers, Quan Lo, Phung Hiep, Xa No, Xang Nang Mau canals.

Climate:

The climate is harmonized with few of storms. It is hot, humid all year. Rainy season lasts from May to November, and dry season lasts from December to April. The annual average temperature is 27oC.

Tourism and Economy:

Hau Giang has advantage of growing rice and fruit tree as well as rearing aquaculture. The province is famous for Phung Hiep Floating Market. From seven branches of Mekong River, hundreds boats join in floating market to sell various fruits and other things like other market. The name 'Phung Hiep snake market' is well-known to foreign tourists. Visitors from over the world come to that market to taste snake liquor and to see the dangerous snake dance.

An Giang Province (Tỉnh An Giang)


From many places About Vietnam, you may know An Giang Province (Tỉnh An Giang) is located to the west of the Mekong Delta between the Tien and Hau rivers and shares a 100km border with Cambodia in the north- west. It also shares border with Dong Thap Province in the east, Cantho City in the south-east, and Kien Giang Province in the south-west.

An Giang has two main types of topography: midland areas and low mountains. The low mountains is Bay Nui (Seven Mountains) in Tinh Bien and Tri Ton districts. Vinh Te Tunnel runs along with the province's border in the west, which connects from Chau Doc to Ha Tien.

Climate: 

An Giang is divided into two seasons: the rain (from May to November), and the dry (from December to April next year). The annual average temperature varies 27oC. The highest temperature is 35oC- 37oC from April to May and the lowest ones is 20oC- 21oC from December to January next year. The annual rainfall is 1,400-1,500mm.

Dong Thap Province (Tỉnh Đồng Tháp)

Quang Binh Province (Tỉnh Quảng Bình)


Quang Binh is one of province is well known of charming landscape of mountain and sea in the North area. From many places About Vietnam, situated in Mekong Delta, Soc Trang Province (Tỉnh Sóc Trăng)is surrounded by Tra Vinh, Vinh Long, Hau Giang, Bac Lieu and East Sea. There are 72km seaside, two river mouths and 30,000ha alluvia ground. Influenced by oceanic weather, the province has two seasons: the rainy season lasts from May to November and dry season lasts from December to April next year. Annual average temperature is 27oC. Annual rainfall is 1,840mm.

Tourism:

Soc Trang is covered by vast rice paddies, shrimp lagoons, luxuriant fruit gardens like longan, rambutan, durian, and orange. Viet (Kinh), Khmer, Hoa ethnic groups live together here. The province has 89 pagodas of Khmer group, 47 pagodas of Hoa people. Ma Toc (Bat), Khleang, Chruitim Chas, Chen Kieu, and Buu Son Tu (Set) are famous pagodas.

Coming to there, tourists like to taste tropical fruit in My Phuoc River Islet, or join many recreation and entertainment activities in Binh An Tourist Resort. Chol Chnam Thmay, Oc Om Boc festivals, Ngo Boat Race also attract many visitors. 
From 2010-2011, Vietnamese Guinness declared top 50 Best Vietnamese Food. Soc Trang was so proud because there were 2 foods in Soc Trang were accepted. They are Pía Pastry and Lèo noodles.
